The Story of Vietnamese Street Food
Vietnamese street food began on the move. A vendor would carry an entire kitchen on a bamboo pole — a charcoal brazier swinging from one end, bowls, herbs and a pot of broth from the other — and set it down wherever people were hungry. From the market lanes of Hanoi to the riverside quays of Saigon, the country learned to eat at the edge of the street, on a low plastic stool, elbow to elbow with strangers.
Every region wrote its own chapter. The north gave us pho, born in the rice-growing villages around Hanoi and Nam Dinh at the turn of the twentieth century — a clear beef broth, charred ginger and onion, star anise and cassia toasted by hand. The centre answered with the chilli-red bun of Hue. The south, warmer and more generous, rolled goi cuon to order in cool rice paper and layered banh mi in a crust the French left behind.
What holds it all together is balance. Fish sauce for salt, lime for sharpness, chilli for heat, sugar for roundness, and always a fistful of herbs picked the same morning. Recipes were rarely written down; they were watched and repeated — a grandmother’s hand tilting the spice tin, a mother’s judgement of the moment the pot had given everything it had. Every family keeps its own quiet variations, and every family believes theirs is the right one.
We brought that street with us to Helsinki. At Hạ Long Bếp our broth still simmers for twelve hours every morning before the doors open. We char our own aromatics, toast our own spices and pick our herbs to order. Pork goes over open flame with lemongrass, rolls are made when they are ordered, and the noodles are softened, never boiled into surrender.
It is a slow way to run a kitchen, and we would not have it any other way. When a bowl reaches your table on Livornonkatu, it carries the same warmth it has carried on Vietnamese pavements for more than a century.
